Preparation: For ½ liter, let 1 tablespoon of mate swell in a little cold water, pour over hot water at 70° to 95° Celsius (do not boil!). Can be infused multiple times.

Mate is the sacred plant of the Guaraní, an indigenous people native to several South American countries. Mate tea is even more popular than coffee in the coffee continent. Its matein is a very gentle caffeine that brings the same benefits as coffee but mitigates its disadvantages. Mate is a good electrolyte drink, important when you sweat a lot. In its home countries it is drunk almost ritually, from a calabash and on every occasion.
