Dietary fibers are largely indigestible plant food components (mostly polysaccharides, i.e. complex carbohydrates made from fructose or glucose), which cannot be digested directly by human enzymes but can be partially digested by bacteria in the intestinal mucosa. A distinction is made between water-soluble and water-insoluble dietary fiber. Insoluble roughage, which must always be consumed with sufficient liquid, swells up in the stomach, increases the volume and increases the feeling of satiety and inhibits the absorption of carbohydrates and cholesterol, but also of important minerals. Soluble fiber dissolves in water, passes unhindered through the stomach, is fermented in the large intestine and serves as food for the intestinal flora (probiotics). Soluble fiber is converted into short-chain fatty acids by bacteria; these are said to protect against colon cancer. In addition, certain soluble fibers inhibit the absorption of fats and carbohydrates and lower blood sugar, blood lipids and insulin after meals. In contrast to insoluble fiber, soluble fiber promotes the absorption of minerals.
Our natural food usually contains a mixture of soluble and insoluble fiber.
