Perfectly pure, full of flavor and minerals, this is the salt from the salt pans of the Kampot province of Cambodia. The tradition of obtaining sea salt is as deeply rooted in the region as the cultivation of pepper. The conditions here are ideal. The strong sun, the ocean breeze and the friendly climate encouraged the establishment of salt pans and the extraction of salt from the ocean already hundreds of years ago. Its quality can be compared with sea salt from the most famous regions in France or Portugal.
This is how the extraction of coarse sea salt looks like, a delicate manual work that has remained unchanged for hundreds of years. It crystallizes on the surface of special pools called salinas, into which water from the ocean is forced and sealed. The water slowly evaporates due to the sun and wind, and salt crystals form on its surface.
The resulting crystals are collected by hand, without any intervention of technology, only with the help of long wooden rakes. Thanks to this, the structure of the salt remains consistent and the salt is perfectly clean and of the highest quality.
When the sun hits the Kampot salt pans, the so-called salt flowers. These are fragile salt crystals formed by the rapid evaporation of water.
These crystals are so fine that they can easily be crushed with your fingertips. The fragility of their structure also corresponds to the delicacy of the taste, which is not as pronounced as that of coarse-grained salt. Nevertheless, the taste profile is similar, thanks to the content of 70 types of minerals and trace elements suitable for the development of the organism's health.
