The vegetable enzyme bromelain is obtained from the ground stalk of the pineapple, papain from the juice of unripe papayas. By fermenting Aspergillus oryzei, a type of mold, digestive enzymes are produced that replace animal enzymes from pigs or cattle with a vegan solution.
