The gut and the gut flora
Up to nine meters long. A surface the size of a tennis court. The intestine is our largest organ. And as big as it is, it is just as important for our health. Our gut is home to several trillions of microorganisms that help it provide our body with vital nutrients. It is surrounded by a complicated network of nerves: every single nerve cell in the intestine is similar to the nerve cells in our brain and spinal cord. Nevertheless, the gut is notoriously underestimated.
Lactic acid bacteria are among the most important natural residents in the intestinal microbiome (intestinal flora). Because of their strong lactic acid and acetic acid production, they produce an acidic environment, which ensures a normal intestinal environment. Acidified milk products such as yoghurt, buttermilk and kefir, but also sauerkraut contain many of these valuable living lactic acid bacteria, so-called probiotics (Greek: pro bios = for life). They are similar to the "good" bacteria in our intestines in the case of a healthy and stable intestinal flora. But the lactic acid bacteria that are naturally present in food are really sensitive.
