Smoked paprika gives an excellent taste to fish dishes, soups, spreads and sauces. It is added to the traditional Spanish sausage - chorizo. Paprika will fully develop its color in combination with fat, but it must not be exposed to too high a temperature, as it could easily turn brown and bitter.
