The name “lecithin” comes from Greek and means egg yolk. In fact, egg yolk is particularly rich in lecithin, but it also occurs in human cell membranes and in the cells of plant seeds for structure formation and flexibility. The word “lecithin” is correctly used in the plural because it is a group of chemical compounds called phosphatidylcholines. These consist of various fatty acids, glycerol, phosphoric acid and choline, which is important for liver function and fat metabolism.
