Sanct Bernhard Sweet Nature Erythrit contains sugar alcohol erythritol, which is naturally found in many fruits. It is produced by natural fermentation of glucose in the presence of microorganisms called Trichosporonoides megachiliensis. Its sweetness is approximately 70% of the sucrose sweetness. Erythritol is not metabolised by the human body and is excreted unchanged in the urine. This can explain its minimal effect on blood glucose levels and low energy value. Its other benefit is that it does not contribute to tooth decay, unlike regular beet sugar.
