Wolfberry Xanthan gum, sometimes called xanthan or E 415, is obtained by fermenting carbohydrates with the aid of Xanthomonas campestris. Xanthan gum is hydrocolloid, so it binds water. This property is mainly used in gluten replacement, as it helps to improve the properties of dough made from gluten-free raw materials. Pastry with xanthan will last longer supple, better hold shape and do not crumble.
